There's nothing like an easy, soft and flavourful sandwich to pack on a summer picnic or prepare as a quick bite at home. Using juicy tomatoes that are in season at local farms, this classic recipe may soon become one of your new lunch favourites!
We highly recommend using flaky Maldon finishing salt
Mayonnaise, store-bought or using homemade recipe below
1 large very ripe heirloom tomato, thickly sliced crosswise
4 slices soft white sandwich bread
Brioche or sourdough works great
4 leaves of basil, washed and torn
For the homemade mayo:
1 egg
½ tsp dry mustard
½ tsp salt
1 tbsp lemon juice
¼ tsp paprika
1 tbsp white vinegar
1 cup neutral oil (canola, veggie, etc.)
Clove of garlic (optional)
Directions
For the homemade mayonnaise:
Add egg, salt, dry mustard, paprika, lemon juice, vinegar, and garlic (if using) to a food processor. Pulse a few times to combine.
Measure the oil into a vessel with a spout (measuring cup with a pour spout works well).
With the processor running continuously, add the oil in a very thin, slow, steady stream through the feed tube — the slower the better for the first ¼ cup especially, since that's when it emulsifies. Adding it too fast is the #1 reason mayo breaks.
Keep streaming until all the oil is incorporated and the mixture is thick, pale, and holds its shape. Taste and adjust salt or lemon juice if needed.
Transfer to a jar and refrigerate. Keeps about 1 week.
For the sandwich:
Salt and pepper the tomato slices. Lightly toast the bread.
Spread a generous amount of mayonnaise on each slice of bread. Divide the tomato slices between 2 slices of bread, add torn basil leaves, and then sandwich with the remaining bread.
Cut the sandwiches diagonally, and serve/eat immediately.
